Blanched Buttered Cabbage

Beautiful color, mild taste, this is a marvelous method for those who are dubious about cabbage.
INGREDIENTS
2 pounds cabbage, cored
4 slices bacon
4 tablespoons butter, melted
Salt to taste
1/2 teaspoon coarsely ground pepperBring a big pot of water to boil. Tear the cabbage leaves into large pieces.
Fry the bacon until crisp; drain, crumble, and set aside.
Plunge the cabbage in the boiling water and boil for just 1 minute; drain immediately. Return to the pot and toss with the melted butter, salt, pepper, and crumbled bacon. Serve hot.
