Apple and Red Cabbage (Microwave)

INGREDIENTS

2-1/2 pounds red cabbage
2 medium onions
1/2 cup butter
1/4 cup sugar
3 medium chopped apples
1/3 cup red wine vinegar
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon ground ginger
3 cloves
1/2 cup raisins

Cut the cabbage in half lengthwise and shred into thin shreds. Discard core. Peel and chop onions fine.

Melt butter in a 3-quart casserole or browning dish. Add onions and heat, stirring often until yellowed, about 2 minutes. Add sugar and stir until it begins to caramelize, 2 to 3 minutes. Add cabbage, apple, vinegar, salt, pepper, ginger and cloves. Cover and cook at FULL POWER 5 minutes. Add raisins and cook at FULL POWER until cabbage is crisp-tender, apples are cooked through and juices reduced, 1 to 2 minutes.
