Simple Brussels Sprouts

INGREDIENTS

1 pound fresh Brussels sprouts
4 to 6 tablespoons butter
1/2 onion, chopped
Salt and pepper, to taste
1 teaspoon fresh lemon juice
1/4 cup toasted slivered almonds

Boil in water or steam the Brussels sprouts for 3 to 4 minutes, until just tender. Strain and place in a bowl of ice water to retain the color. Drain well and cut the sprouts in half.

Sauté the onions in 2 to 3 tablespoons of the butter in a wide sauté pan until the onions are translucent. Add the Brussels sprout halves and 2 to 3 more tablespoons butter and cook on medium-high heat for several more minutes, until the sprouts reach desired consistency. Add salt and pepper, to taste, while the sprouts are cooking. DO NOT overcook the sprouts.

Remove from the heat; toss in 1/2 of the toasted slivered almonds and the lemon juice. Add more salt and pepper, if needed. Place into serving dish and garnish with the remaining toasted almonds.

Makes 6 to 8 servings
