Lemon-Pepper Broccoli

INGREDIENTS

1 medium bunch of broccoli, cut into 12 spears
3 tablespoons butter
2 ounce jar diced pimiento, drained
Pinch of salt
Pinch of cayenne pepper
2 teaspoons grated lemon peel

In 10-inch skillet place broccoli spears; add enough water to cover. Bring to a full boil. Cook over medium heat until broccoli is crisp tender, 5 to7 minutes. Drain; return to skillet.

Add remaining ingredients, pushing broccoli to side just until butter has melted. Cook over medium heat, stirring occasionally, until broccoli is heated through, 5 to 7 minutes.

Serves 4
