Chicken Divan

INGREDIENTS Salt and pepper, to taste
1 (3-pound) chicken
Water to cover chicken
1 package frozen broccoli
2 tablespoons butter
3 tablespoons flour
1/2 cup chicken broth
1/2 cup light cream
2 tablespoons sherry
Parmesan cheese, gratedSalt and pepper the chicken. In Dutch oven, add water to cover and simmer for 1 hour. Remove the chicken from the broth, bone the meat and cut it into large pieces.
Cook the broccoli according to package directions. Drain it and arrange in the bottom of a baking pan. Arrange the chicken pieces on top.
Make a white sauce with the butter, flour, chicken broth and cream. When the sauce is quite thick and very smooth, stir in the sherry. Pour the sauce over the chicken. Sprinkle the top with grated Parmesan cheese. Bake approximately 15 minutes in a 400 degree oven.
