Broccoli Ring with Parmesan Cheese Sauce

INGREDIENTS 2 tablespoons butter
3 (10-ounce) packages chopped broccoli, thawed, squeezed and drained
1/2 cup chopped onion
4 eggs
1/3 cup light cream
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon ground nutmeg
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon white pepper
2 cups light cream or milk
3/4 cup grated Parmesan cheeseButter a 6-cup ring mold. Purée broccoli and onions in blender or food processor.
In a large bowl, beat eggs until light; add puréed broccoli, cream, salt, pepper, and nutmeg. Spoon broccoli mixture into mold.
Place mold in a 13 x 9 x 2-inch baking pan and place on oven rack. Pour boiling water into baking pan halfway up side of mold. Bake at 350 degrees for 35 minutes or until knife comes out clean. Remove from oven. Lift mold out of water and let stand 5 minutes.
With metal spatula, loosen broccoli ring from edge of mold. Place serving plate over mold and invert mold to release broccoli ring.
In medium saucepan, melt 3 tablespoons butter. Whisk in flour, salt, and white pepper. Cook until bubbly, about 1 minute. Gradually stir in light cream or milk. Cook, stirring constantly, until thickened, about 3 minutes. Stir in Parmesan cheese. Pour over broccoli ring.
