Broccoli and Onion Au Gratin

INGREDIENTS

2 tablespoons butter
2 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon rosemary leaves, crushed
¼ teaspoon pepper
1-½ cups milk
1 cup shredded Swiss cheese
2 cups broccoli flowerets
1 medium onion, cut into eighths

TOPPING

2 cups fresh bread crumbs
1/3 cup butter, melted
¼ cup fresh chopped parsley

Heat oven to 350 degrees.

In 1 quart saucepan melt 2 tablespoons butter; stir in flour, salt, rosemary and pepper. Cook over medium heat, stirring constantly, until smooth and bubbly, about 30 seconds. Stir in milk. Continue cooking, stirring occasionally, until mixture thickens and comes to a full boil, about 4 to 5 minutes. Boil 1 minute. Remove from heat; stir in cheese until smooth. Set aside.

In greased shallow casserole or 9-inch square baking pan place broccoli and onion. Stir in cheese sauce.

In small bowl stir together all topping ingredients. Sprinkle over broccoli mixture.

Bake for 25 to 35 minutes, or until top is golden brown and broccoli is crisp tender.
