Broccoli in Cheese Custard

This custard recipe may also be used with other cooked vegetables such as cauliflower, corn kernels, onions, spinach, and cabbage.

INGREDIENTS

2 cups chopped, cooked broccoli
3/4 cup grated Cheddar cheese
3 eggs
1-1/2 cups milk or light cream
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Preheat the oven to 350 degrees.

Butter a 1-1/2 quart baking dish, put the chopped broccoli into it, sprinkle with the cheese.

Beat the eggs lightly in a bowl and stir in the milk or cream, salt, and pepper. Stir into the broccoli-cheese mixture.

Put the baking dish in a shallow pan with hot water halfway up its sides. Bake for 45 to 60 minutes, or until the custard is set.
