Steamed Broccoli with Warm Balsamic Vinegar

Steamed Broccoli never tasted so good! FROM - The Working Family's Cookbook

1 bunch broccoli, about 1-1/2 pounds
3 tablespoons olive oil
1 plum tomato, seeded and chopped
1 clove garlic, finely chopped
1/4 teaspoon hot red pepper flakes
1 tablespoon Balsamic vinegar
1/4 teaspoon grated lemon rind
1 teaspoon lemon juice
Salt and freshly ground pepperTrim the woody ends and cut the broccoli into florets. Peel the stems with a vegetable peeler, halve them lengthwise, and cut them into 1-1/2-inch lengths. Steam the broccoli in a vegetable steamer over 1-inch of boiling water for 15 to 20 minutes, or until crisp-tender.
Meanwhile, heat the oil with the tomato, garlic, and red pepper flakes in a small saucepan over low heat just until warm. Whisk in the vinegar and lemon rind and add lemon juice to taste. Season with salt and pepper to taste.
Pour the dressing over the broccoli in a serving bowl. Taste and adjust the lemon juice and seasonings.
