Spicy Black-Eyed Peas

INGREDIENTS

1/2 cup chopped onion
1/2 cup chopped green pepper
1 (15.8-ounce) can black-eyed peas, undrained
1 (14.5-ounce) can stewed tomatoes, undrained
1 teaspoon dry mustard
1/2 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 tablespoon soy sauce

Coat a large nonstick skillet with cooking spray. Place over medium heat until hot. Add onion and green pepper. Sauté until vegetables are crisp-tender.

Add peas and next 6 ingredients, and bring to a boil. Reduce heat and simmer 20 to 30 minutes, stirring frequently. Serve hot.

Makes about 5 servings
