Soulful Black-Eyed Peas

INGREDIENTS 1 pound smoked pig tails
1 pound bag black-eyed peas
1-1/2 cups chopped onion
1 cup chopped green bell pepper
1/2 cup butter
1/4 cup flour
1/2 teaspoon crushed red pepper flakes
Salt, to tasteIn a large pot add 1 quart cold water. Boil until tender the pig tails. (If water boils out add more, then add the black-eyed peas.
When peas are halfway done, sauté onions and green peppers and add them to the pot. Cook until peas are soft; mix flour and 1/2 cup of juices from the pot, then pour back into pot and add butter. Season to taste with red pepper flakes, salt, and pepper.
