New Year's Black-Eyed Peas

INGREDIENTS

2 pounds dried black-eyed peas
1 teaspoon baking soda
1 pound country ribs
1 tablespoon salt
1 tablespoon sugar
1/4 teaspoon crushed red pepper flakes, or to taste
1 large onion, chopped
2 cloves garlic, chopped

Soak black-eyed peas overnight. Drain. Rinse peas in lukewarm water and cover with lukewarm water and baking soda. Bring to a good boil. Drain.

In a heavy pot, brown country ribs, onion, and garlic. When ribs are golden brown, add peas, salt, sugar, and red pepper. Cover with hot water out of kettle. Bring to a fast boil. Reduce heat and simmer on low for 2 hours, or until beans are tender, but not mushy.
