Black-eyed Peas

INGREDIENTS 1 (1-pound) package black-eyed peas
2 quarts water
Ham hock, ham bone, piece of salt pork or several slices of bacon
Salt and pepper, to tasteWash peas and soak in cold water overnight or at least 6 hours. Drain.
Place peas in a large pot and cover with water. Add ham hock, ham bone, salt pork, or bacon. Simmer for about 2 hours or until peas are tender. Add more water if needed while cooking.
NOTE - During the last 1/2 hour to 45 minutes before the end of cooking time, I add some chopped onions and chopped celery to my peas. And I most always use ham hocks for black-eyed peas, I prefer its flavor in this recipe. This is optional.
