Black-eyed Peas

INGREDIENTS

1 (1-pound) package black-eyed peas
2 quarts water
Ham hock, ham bone, piece of salt pork or several slices of bacon
Salt and pepper, to taste

Wash peas and soak in cold water overnight or at least 6 hours. Drain.

Place peas in a large pot and cover with water. Add ham hock, ham bone, salt pork, or bacon. Simmer for about 2 hours or until peas are tender. Add more water if needed while cooking.

NOTE - During the last 1/2 hour to 45 minutes before the end of cooking time, I add some chopped onions and chopped celery to my peas. And I most always use ham hocks for black-eyed peas, I prefer its flavor in this recipe. This is optional.
