INGREDIENTS 1 pound dried black-eyed peas
4-ounces salt pork
2 quarts water
1 tablespoon finely chopped onion
1 teaspoon salt
1/2 teaspoon crushed red pepper flakesSoak the black-eyed peas for at least 2 hours. While the peas are soaking, place the salt pork into a pot with water and let it come to a boil; reduce the heat to low and let simmer for 45 minutes.
Add the peas, onion, salt, and crushed red pepper flakes. Let cook for 45 minutes, adding water if necessary, or until the peas are tender.
Makes 6 to 8 servings
