Shredded Beets

INGREDIENTS

1 pound young beets
3 tablespoons butter
1 tablespoon lemon juice
Salt
Freshly ground black pepper

Shred the beets by rubbing them against the large holes of a grater or in a food processor.

Heat the butter in a skillet. Add the shredded beets, toss, then add the lemon juice and 1 tablespoon of water.

Cover and cook over moderate heat, stirring frequently, for 5 minutes or until tender. Season to taste and serve hot.

Serves 3 to 4
