Raisin-Sauced Beets

INGREDIENTS

1 (16-ounce) can sliced beets (2 cups)
1/3 cup raisins

1/4 cup sugar
1 teaspoon cornstarch
3 tablespoons lemon juice
2 tablespoons butter or margarine

Drain beets, reserving 1/3 cup liquid.

In medium saucepan combine reserved beet liquid and raisins. Cover; simmer over low heat until raisins are plumped, about 5 minutes.

Combine sugar and cornstarch; stir into raisins in pan. Add lemon juice and butter; cook and stir over medium heat until slightly thickened. Stir in beets and simmer until mixture is heated through, about 5 minutes.

If desired, garnish with a twist of lemon.

Makes 4 servings
