Lemon-Garlic Roasted Beets

INGREDIENTS

1 pound beets, peeled and sliced
4 garlic cloves, thinly sliced
2 tablespoons lemon juice
1/4 teaspoon lemon zest
1/2 teaspoon extra virgin olive oil
1/4 teaspoon sugar
1 pinch salt
1 pinch white pepper

Preheat oven to 375 degrees.

In a 8-inch square nonreactive baking dish, toss all ingredients together.

Spray a piece of parchment paper with cooking spray and set oiled side down on the beets. Cover tightly with foil and roast for 40 minutes, shaking the pan occasionally.
