Manninos or Soft Clam Fritters

Another delicacy from the Chesapeake Bay!

INGREDIENTS

1 quart Soft-Shell Clams
1 cup flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon pepper
1 egg
Crisco shortening, for frying, as needed

In a large bowl, mix the clams with the flour, baking soda, salt, pepper, and egg.

In a skillet, pour Crisco (or oil) to 1/2-inch deep. Drop spoonfuls of the batter to form a fritter. Brown on both sides until crispy and delicious.
