Maine Coast Clam Fritters

INGREDIENTS About 30 medium-sized hard-shell clams, scrubbed, shucked and very finely chopped
2 large eggs
1 cup flour
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
Oil or fat for deep fryingMake the batter by beating the eggs and adding the flour gradually. Add the milk slowly, then the salt and pepper. Add the chopped clams and stir all together.
Heat the fat or oil until it reaches 375 degrees.
Drop the clam mixture by spoonfuls into the fat. When the fritters are brown on one side - about 1 minute - turn them and brown the reverse side. Serve them piping hot.
Serves 4
