Maninose Patties

INGREDIENTS

2 dozen Maninose or soft clams
4 eggs, well beaten
1/2 cup flour
1/2 teaspoon baking powder
Salt, pepper, cayenne and nutmeg to taste
1 tablespoon parsley, finely chopped

Wash clams in their own juice, drain, and discard necks, chopping the remainder into small pieces.

Beat eggs well and add flour, baking powder, seasonings to taste and parsley. Beat until well mixed and stir in chopped clams.

Shape mixture into small cakes and fry slowly in a heavy skillet until browned on both sides.
