Japanese Sweet Abalone

INGREDIENTS 1 pound abalone meat, pounded
1 cup water
3 tablespoons dry white wine
2 tablespoons sugar
1 tablespoon soy saucePlace the abalone meat in a large saucepan and add the water. Bring to a boil, then reduce the heat and simmer uncovered for 10 minutes.
Add the wine and sugar and cook for 5 minutes; then stir in the soy sauce and cook for 3 minutes more.
Cool, then drain the abalone and cut it into slices 1/2-inch thick.
Serves 2
