INGREDIENTS 2 whole large chicken breasts
2 tablespoons butter
1 cup fresh sliced mushrooms
2 tablespoons sliced green onions
1/3 cup chicken broth
1 tablespoon flour
1 cup seedless grapes, halved
1/4 cup white wine
2 to 3 cups hot cooked riceSkin and halve lengthwise the chicken breasts. Cut breasts into 1-inch pieces. Set aside.
In a heavy frying pan, melt butter and stir-fry mushrooms and onions for 2 minutes or until soft. Add chicken pieces and stir-fry for 5 minutes, or until chicken is cooked through.
Blend broth and flour; add to chicken mixture. Cook until thickened, 1 minute or so; add grapes and wine. Heat thoroughly and serve over hot rice.
Makes 4 to 5 servings
