Sante Fe Chicken Fajitas

While many think of fajitas as Mexican, they actually originated in France. But this version of fajitas is made with bell peppers, onions and chicken, all enhanced with soy sauce.

INGREDIENTS

1/3 cup plus 2 tablespoons soy sauce, divided
1/4 cup fresh lime juice
4 boneless, skinless chicken breast halves
1 tablespoon vegetable oil
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
1 large red onion, cut into strips
Eight (8-inch) flour tortillas, warmed
Butter or margarine

Combine 1/3 cup soy sauce and lime juice; pour over chicken in large plastic food storage bag. Press air out of bag; close top securely. Refrigerate for 1 hour, turning bag over occasionally. Drain.

Broil chicken 5 inches from heat source 7 to 9 minutes on each side, or until no longer pink in center.

Meanwhile, heat oil in a large skillet over high heat. Add peppers and onion; sauté 3 to 4 minutes, or until tender-crisp. Remove from heat; stir in remaining 2 tablespoons soy sauce. Slice chicken into thin strips.

To serve, spread tortillas with butter, wrap around desired amount of chicken and veggies.
