INGREDIENTS

SALSA RICE RING

Nonstict cooking spray
4 cups cooked white rice
3/4 cup medium-hot salsa
1/4 cup minced parsley

CREOLE CHICKEN

1 tablespoon salad oil
1-1/2 pounds boneless chicken breasts, skinned and cut in 3/4-inch cubes
3/4 pound medium shrimp, peeled and deveined
1 green pepper, chopped
1 teaspoon dried oregano leaves, crushed
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup medium-hot salsa
2 green onions, chopped
1/4 pound okra, cut in 1-inch pieces

MAKE SALSA RING - Preheat oven to 325 degrees. Grease a 4-cup ring mold with nonstick cooking spray. In a bowl, mix rice with 3/4 cup salsa and the parsley. Spoon into mold; warm through in oven.

MAKE CREOLE CHICKEN - In a 12-inch skillet, heat oil over medium-high heat. Add chicken, shrimp, green pepper, oregano, salt and pepper. Sauté 3 minutes. Stir in remaining ingredients; simmer 5 minutes.

Unmold rice ring onto a serving platter. Spoon chicken mixture into center of rice ring and serve immediately.

Makes 6 servings
