San Juan Quiche

9-inch pie dish

Preheat oven to 325 degrees

Bake for 1 hour 15 minutes or until firm and lightly browned on top. (check at 1 hour)

FILLING INGREDIENTS

1-1/2 plus cups Monterey Jack cheese
2 serrano chili peppers (remove seeds), finely chopped
1/2 cup diced onions
1/2 cup sliced mushrooms 1/4 cup diced ham or prosciutto
1/4 cup diced tomatoes or a few sun dried tomatoes
3 Tablespoons grated Parmesan cheese
2 teaspoons chopped chives, optional
1/8 teaspoon cayenne pepper or several dashes Tabasco sauce
5 eggs
1 cup half-and-half

Line bottom of pie shell with half of the Monterey Jack cheese.

Sauté vegetables until tender and sprinkle on top of cheese. Add prosciutto. Sprinkle remaining cheese on top of vegetable layer.

Combine chives, cayenne pepper (or Tabasco), eggs and half-and-half. Mix well. Pour over ingredients in pie tin. Sprinkle Parmesan cheese on top.

Bake as directed
