Quiche Florentine

INGREDIENTS

1 (9-inch) deep dish pie shell
1/2 small package frozen chopped spinach
6 slices bacon
1 large onion, sliced very thin
1-1/4 cups cubed Swiss cheese
2 eggs
1 cup heavy cream
Salt and pepper to taste

Bake pie shell 5 to 10 minutes until light brown.

Cook spinach according to package directions, drain and set aside in a large bowl.

Sauté bacon until crisp, crumble and add to spinach. Reserve 2 tablespoons bacon grease and sauté onion in grease until transparent.

Combine onion, Swiss cheese, bacon and spinach; mix well. Spoon into pie shell.

In separate bowl, beat eggs; add cream, mix well. Pour into pie shell. Add salt and pepper to taste.

Bake at 350 degrees for 35 to 40 minutes until top is golden brown.
