Mushroom Quiche

INGREDIENTS 1 quiche shell
3 tablespoons butter
1/4 cup chopped green onions
2-1/2 cups sliced mushrooms, (Morels or Chanterelles are best)
1 teaspoon salt
1/2 teaspoon lemon juice
3 eggs
1 egg yolk
1-1/4 cup heavy cream
Pinch pepper
Pinch nutmeg
3 ounces grated Swiss or Parmesan cheeseSauté the onions and mushrooms with the butter and lemon juice in a skillet till softened and translucent, about 10 minutes.
Beat the eggs and yolks gently with a whisk. Blend in the cream and other seasonings until blended well. Gently add in the mushrooms. Sprinkle the cheese on top.
Pour into shell and bake at 350 degrees. Bake for about 35-40 minutes on the center rack of oven. Bake until a knife dipped into middle comes out clean. Remove and let cool for 15 minutes to let it set.
Garnish with paprika, chives or more cheese.
