Buttery Brie Quiche

INGREDIENTS

1 quiche shell
6 ounces Brie, sans crust
4 ounces cottage cheese, small curd
3 tablespoons unsalted butter
1/8 cup heavy cream
3 eggs
2/3 cup milk
1/4 tablespoon chives
Pinch salt
Pinch pepper
Pinch garlic powder, optional

Beat the eggs gently with a whisk. Blend in the milk, cream, butter, cheese and other seasonings until blended well.

It is easier if you pop the brie into the microwave for several seconds to soften it. Pour into shell and bake at 375 degrees.

Bake for about 30 minutes on the center rack of oven. Bake until a knife dipped into middle comes out clean. Remove and let cool for 15 minutes to let it set. Garnish with paprika, chives or more cheese.
