Quiche Alsace-Lorraine

INGREDIENTS

1 pastry shell
8 ounces bacon (1/2 package), or ham
1 onion chopped fine
3 eggs
1/2 cup creme fraiche or sour cream
1 1/2 cup half and half or 3/4 cup milk with 3/4 cup cream
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon parsley
1/2 cup Swiss cheese

Fry the bacon and crumble into small pieces, set aside.

Add the onions to remaining bacon grease and sauté until cooked, about 10 minutes.

Beat the eggs and add the créme fraiché or sour cream and half and half, salt, pepper, and parsley together until blended.

Place the bacon, onion and cheese evenly on bottom of quiche crust then pour the egg mixture on top.

Bake in a 350 degree oven for 35 minutes. Best served warm.
