Loin of Pork with Apple-Glaze

Cooking the pork first in a microwave oven before grilling reduces the overall cooking time by half.
INGREDIENTS
3 pound rolled boned loin of pork (about 5 pounds with bone)
1 tablespoon leaf sage, crumbled
1 teaspoon salt
1/4 teaspoon pepper
1 medium-size onion, cut into small wedges
1-1/2 cups apple jelly
2 tablespoons apple jack brandyRub the pork with the sage, salt and pepper. Tuck the onion wedges into the loin.
Boil the apple jelly in a saucepan for 3 minutes. Stir in the apple jack. Remove from the heat.
Place the meat on the spit. Attach the spit to the electric rotisserie. Grill over hot coals, basting frequently with the apple glaze, for 2 to 3 hours or until a meat thermometer registers 170 degrees.
Let stand for 15 minutes before carving. Serve with any remaining glaze.
Makes 6 servings
MICROWAVE DIRECTIONS - Prepare the loin of pork as directed in the above recipe. Place fat-side up in a shallow microwave-safe baking dish. Cover with wax paper. Microwave at half power for 15 minutes. Grill as directed in the recipe, 1 hour or until a meat thermometer registers 170 degrees.
