Mustard-Apricot Pork Chops

INGREDIENTS

1/3 cup apricot preserves
2 tablespoons Dijon mustard
4 (3/4-inch) thick pork chops
3 green onions, chopped

Combine preserves and mustard in a small saucepan; heat over low heat until preserves melt, stirring occasionally. Set aside.

Trim excess fat from pork chops and place chops on a lightly greased broiler pan. Broil 4 inches from heat for 5 minutes; brush chops with half of glaze and turn. Broil 5 minutes, and brush with remaining glaze. Broil an additional 2 minutes. Remove from oven; sprinkle with chopped green onions.
