Herbed Pork Loin Chops

INGREDIENTS 4 boneless pork loin chops, cut 1-inch thick
1 tablespoon chopped fresh tarragon OR rosemary (or 1 teaspoon dried)
1 tablespoon olive oil
1 clove garlic, finely chopped
1/4 teaspoon cracked black pepper
Salt, to tastePlace chops in a shallow glass dish. Combine the tarragon or rosemary, oil, garlic and pepper in a small bowl. Brush the herb mixture evenly over both sides of the chops. Cover and marinate the chops for 30 minutes.
Preheat the broiler.
Place the chops on a rack in a broier pan so the surface of the meat is 4 to 5 inches from the heat. Broil the chops, turning once, for 15 to 30 minutes or until a meat thermometer registers 170 degrees. Season with salt, if desired.
Serves 4
NOTE - Herbs lend an aromatic quality to the marinade. If possible, use the fresh tarragon or rosemary so a more assertive flavor will develop.
