Country Ham with Red Eye Gravy

INGREDIENTS

4 (1/4-inch thick) slices uncooked country ham
4 tablespoons vegetable oil
2 cups strong black coffee
4 tablespoons all-purpose flour
1 teaspoon paprika

Cut gashes in fat to keep ham from curling. Sauté ham in oil in a heavy skillet over low heat 3 to 4 minutes on each side. Remove the ham from the skillet, and keep warm.

Combine coffee and flour; add to pan drippings, stirring constantly, until thickened. Add paprika. Serve with ham.
