Brandied Pork

INGREDIENTS

4-pound pork center loin roast
1 (6-ounce) can frozen pineapple-orage juice concentrate
1 small onion, chopped, about 1/4 cup
1 clove garlic, finely chopped
1 teaspoon crushed gingerroot
1/2 teaspoon salt
1/4 cup brandy

Place pork loin roast fast side up in shallow roasting pan. Make vertical cuts between bones, cutting almost to bottom of roast. Insert meat thermometer so tip is in center of thickest part of pork and does not touch bone or rest in fat. Roast in a 325 degree oven until thermometer registers 170 degrees; about 2 hours.

Heat frozen concentrate, onion, garlic, gingerroot and salt just to boiling over medium heat; remove from heat.

During last hour of roasting, stir brandy into juice mixture and brush over pork every 15 minutes. Serve remaining sauce with pork.
