Baked Pork Roast

INGREDIENTS 1 (8 to 10-pound) center-cut pork loin roast
4 large cloves garlic
Salt, to taste
Cayenne pepper, to taste
1 teaspoon finely crushed dried mint
1 cup water or stock
1 cup dry white wine
1/2 cup finely chopped green onion topsPreheat the oven to 350 degrees. Using a sharp knife, pierce 4 deep holes in the pork and stuff with the garlic. Season the roast with salt and pepper, and sprinkle with the dried mint and pat into the meat.
Place the roast in a roasting pan with a rack. Mix the water and wine together and pour around the roast. Cover and bake until almost done, about 2 hours, basting occasionally.
Sprinkle the green onions all over the top, and cook, uncovered, until brown.
Makes 10 to 12 servings
