Turkey Burgers with Carrot-Dill Coleslaw (Low-Fat)

INGREDIENTS

Olive oil spray
1 large shallot
2 tablespoons drained capers
4 sprigs parsley, preferably flat-leaf
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/4 cup egg substitute
Salt
Freshly ground pepper
1 pound ground turkey breast meat
4 sesame seed hamburger buns
12-ounces green or red cabbage
2 medium carrots
8 to 10 large sprigs fresh dill, enough for 1/4 cup of chopped leaves
1/3 cup light mayonnaise
2 tablespoons cider vinegar
1 teaspoon sugar
1 medium to large tomato, optional
Ketchup, optional

Spray a heavy, 12-inch, nonstick skillet with olive oil spray and put over medium-low heat.

Peel and halve the shallot. With the motor of a food processor running, drop the shallot down the chute. Scrape down the sides of the bowl with a rubber spatula and add the capers, parsley leaves, Worcestershire sauce, mustard, egg substitute, and salt and pepper to taste. Turn on the machine to mix well while you put the turkey in a mixing bowl.

Add the contents of the food processor to the turkey and mix well. Form into a flattened ball. Score into 4 equal sections and form into 4 patties, each 3 to 3-1/2-inches in diameter. Put the turkey into the skillet and raise heat to medium. Cover and cook for 4 minutes. Quickly wash your hands and the food processor with soapy water and rinse.

While the turkey cooks, toast the hamburger buns in a toaster oven.

Meanwhile, remove the core from the cabbage and shred using the shredding attachment of the food processor or the large holes of a 4-sided grater. Put the cabbage in a large mixing bowl.

Turn the burgers over and cook on the other side for 4 minutes or until no pink remains in the center.

Peel and shred the carrots in the food processor or with the 4-sided grater. Add to the cabbage. Chop the dill leaves and add to the cabbage and carrots.

In a small bowl, mix together the mayonnaise, vinegar, sugar, and salt and pepper to taste. Add to the cabbage and carrots and mix thoroughly. (If using a tomato, cut it into 4 slices.)

Serve the turkey burgers on the toasted hamburger buns with a slice of tomato, if desired, and coleslaw on the side. Serve the ketchup at the table, if desired.
