Cumin-Cinnamon Chicken

A simple dusting of cumin and cinnamon creates a very elegant flavoring for quick-cook chicken breasts. In 15 minutes, you can have a touch of Morocco.

INGREDIENTS

1 tablespoon butter or olive oil
1 large garlic clove, minced
4 skinless, boneless chicken breasts
1/2 teaspoon ground cumin or 1 teaspoon cumin seeds
1/8 teaspoon ground cinnamon
Pinch of ground white pepper

In a large frying pan over medium heat, melt butter or olive oil. Add garlic and chicken breasts.

Sprinkle both sides of chicken evenly with cumin or cumin seeds, cinnamon, and white pepper.

Sauté chicken, covered, from 6 to 8 minutes per side.
