Cherry-Orange Chicken

INGREDIENTS

4 pound broiler-fryer chicken
4 tablespoons butter or margarine, melted
1 cup brown sugar
½ teaspoon orange peel
¼ teaspoon ground ginger
½ cup orange juice
1 can cherries

Place the cut up chicken in a large baking pan. Pour the melted butter over the chicken.

Combine the brown sugar, orange peel, ginger and orange juice, blending well, and pour over the chicken. Bake in a preheated 350 degree oven for 45 minutes.

Remove and add cherries, then return to oven and bake an additional 30 minutes, or until the chicken is golden brown and tender.
