Chicken and Peppers

INGREDIENTS ¼ cup soy sauce
2 teaspoons fresh ginger, minced
¼ cup sherry
1-¼ pound boneless chicken
2 tablespoons vegetable oil
1 cup chopped onion
2 cloves garlic, minced
4 red or bell green peppers
½ cup waterSlice bell peppers into ¼-inch thick strips.
In a medium bowl, combine soy sauce, ginger, sherry, and skinless chicken. Marinate several hours.
Put oil in a large nonstick skillet, heat oil over medium heat. Add onions and garlic, cook 3 minutes, stirring frequently. Add peppers, cook 3 minutes. Add chicken and marinade. Cook, stirring frequently, until chicken loses its pink color. Reduce heat to low. Add water.
Cover and cook 15 minutes, stirring occasionally.
Serves 4
