Chicken A La Tartare

INGREDIENTS

1 broiling chicken
1/2 cup fat, melted
4 sprigs parsley
1 small onion
1/4 pound mushrooms
1 clove garlic
1/2 teaspoon salt
1/8 teaspoon pepper
Bread crumbs

Clean chicken, split into halves and place in skillet with fat.

Chop parsley, onion, mushrooms and garlic and add to fat with salt and pepper.

Pour over chicken, cover and simmer 15 minutes, turning occasionally. Dip chicken into bread crumbs and broil until browned.

Serves 2
