Chocolate Sabayon Pie

INGREDIENTS

1 (8-1/2 ounce) package chocolate wafers, crushed
1/2 cup sifted powdered sugar
1/2 cup butter, melted
10 (1-ounce) squares semisweet chocolate
2 egg yolks, lightly beaten
1/4 cup water
1 tablespoon sugar
2 tablespoons white Creme de Menthe
2 tablespoons white Creme de Cacao
1 cup whipping cream, whipped
Additional whipped cream, optional

Combine chocolate wafer crumbs, 1/2 cup powdered sugar, and butter; stir well. Firmly press crumb mixture evenly over bottom and 1-1/4 inches up sides of a 9-inch springform pan. Chill until firm.

Place chocolate squares, egg yolks, and water in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts, stirring constantly. Remove from heat and let cool.

Combine 1 tablespoon sugar and liqueurs, stirring until sugar dissolves. Gradually stir liqueur mixture into chocolate mixture. Gently fold whipped cream into chocolate mixture; spoon into prepared pan. Chill 8 hours or until firm. Garnish with additional whipped cream, if desired.

Makes one 9-inch pie
