If you are a regular visitor to my site, you know that I stress many times about preparing ahead as much as you can! With the size of my family, I never make just 1 pie!!...For me, it's too much work to do one, so when I make my crusts, I prepare ahead.
I use lard - I guess that comes back to my gram, who never used anything but - although hard to find sometimes, I purchase my lard from our local Amish market. Who does more baking than the Amish?
INGREDIENTS
1 pound lard
6 cups flour
1 tablespoon salt
1 cup cold water
Combine flour, salt, and lard in a large bowl. Work in lard with hands. Add water all at once and continue to mix with hands until all water is worked into dough.
Shape into 4 balls and store in plastic bags. They may be frozen, refrigerated, or used immediately. See Storing and Freezing Dough and Pies

One ball, cut in half, will make either one double-crust or two single crusts.
