Hot Water Pastry

This is a good recipe for beginners. Somewhat less flaky and tender than the Basic Pastry, but it is still very acceptable.




INGREDIENTS

1/2 cup shortening
1/3 cup boiling water
1-1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder

Put the shortening in a bowl, add the boiling water, and stir until the shortening melts. Add the flour, salt and baking powder, and mix with a fork until blended. Form the dough into a ball. Roll it out 2 inches larger than the pie pan. Ease the dough into the pan and fit it loosely, but firmly. Cover the pan and let the dough chill in the refrigerator for at least 4 hours before baking.

Bake for 15 minutes in a preheated 425 degree oven. Or fill first and bake as directed in the filling recipe.

Makes one 8 or 9-inch pie shell
