The food processor does not prepare good Basic Pastry
- it blends the flour and shortening into a paste; instead of keeping bits of shortening separate from the flour to create a flaky texture when baked.
The food processor will, however, blend Tart Pastry most satisfactorily. Be sure to have the butter very chilled. Use the metal blade (follow the directions in the Tart Pastry recipe). Process just until a ball of dough forms on the blade; do not overblend.
The food processor will make perfect crumbs for crumb crusts. You can also use the slicing blade to prepare many fruits for pie filling.
