Chocolate Pecan Pie

INGREDIENTS

2 cups pecans, chopped
6 tablespoons unsalted butter
1 cup corn syrup
1/2 teaspoon salt
3 large whole eggs
1 tablespoon vanilla extract
1/2 cup chocolate chips
1 pre-baked 9-inch pie shell

Set oven rack to lowest level. Preheat oven to 300 degrees. Spread the pecans evenly on a baking tray and bake until lightly toasted, about 5 minutes.

Bring a saucepan half full of water to a low simmer over medium heat. Melt the butter in a heat proof bowl placed directly over the simmering water. Remove the bowl from the heat. Thoroughly stir, blending in the corn syrup, salt, eggs and vanilla. Return bowl to the simmering water; stir mixture until shiny and very warm to the touch.

Stir the chips and the pecans into the egg mixture. Pour the warm pecan filling into the prebaked pie shell. Bake until filling center is firm and jelly-like, about 1 hour.

Makes one 9-inch pie.
