Chess Pie

INGREDIENTS

2 cups sugar
1 tablespoon white or yellow cornmeal, heaping
3 eggs, beaten slightly
2 teaspoons vanilla
2 tablespoons all-purpose flour
½ cup butter or margarine
½ cup buttermilk

One unbaked pie shell

Melt butter. Mix dry ingredients.

Add butter and eggs to dry mixture and mix well. Add vanilla and buttermilk. Mix well.

Pour into unbaked pie shell. Bake at 325 degrees for 1 hour.

Serves 8.

NOTE - This pie is better if allowed to ripen for a few hours before serving. May serve with whipped cream or plain. Also freezes well for later use.
