Blender Cheese Pie

INGREDIENTS

GRAHAM CRACKER CRUST

16 graham crackers, crushed finely
1/4 cup melted butter

Blend cracker crumbs and butter thoroughly, and line a 9-inch pie pan very firmly.

CHEESE FILLING

1-1/2 (8-ounce) packages cream cheese (12-ounces)
2 eggs
2 tablespoons milk
1/4 cup sugar
1 tablespoon vanilla
1 teaspoon lemon juice
1/2 teaspoon grated lemon rind

Place all ingredients in blender, and whirl for 1 minute. Pour into pie shell and bake in a 375 degree oven for 20 minutes. Cool, and cover with topping.

TOPPING

1 cup commercial sour cream
1/4 cup sugar
1 teaspoon vanilla

Combine ingredients; spread over baked cheese pie and place in the oven again, this time at 475 degrees for 7 minutes. Cool and serve.

Makes 8 servings

NOTE - Recipe may be increased by 1/2 to serve 12.
