INGREDIENTS

PIE SHELL

1-1/2 cups vanilla wafer crumbs
1/3 cup melted butter

Preheat oven to 300 degrees.

Roll vanilla wafers to fine even crumbs with a rolling pin. Putting wafers in a plastic bag or betwen two sheets of wax paper is a convenient way to make the crumbs. As a variation, Cinnamon Crisp Graham Crackers may be used.

Mix the crumbs and butter; blend well with fingers, a fork, or pastry blender. Press into a 9-inch pie pan. Bake in a 325 degree oven for 10 minutes. Cool.

FILLING

1/2 pound peanut brittle or English toffee, very finely crushed
2 cups heavy cream, whipped

Fold the very finely crushed peanut brittle or English toffee, into the whipped cream. Pour into the pie shell. Chill very thoroughly and serve. This pie may be frozen. Prepare in advance.
