Best Sweet Potato Pie

INGREDIENTS 3 cups sugar
4 eggs
2 pounds sweet potatoes, boiled and mashed
1-1/2 sticks butter
1 tablespoon vanilla
1/2 tablespoon lemon juice
1-1/2 tablespoons Carnation evaporated cream
Coconut3 (9-inch) unbaked pie shells
Bake pie crusts. Mix all ingredients together with hand mixer. Pour into pie crusts. Bake at 350 degrees for 25 to 30 minutes. Sprinkle with coconut on top; bake 6 to 7 minutes more.
Makes 3 (9-inch) pies
