Apple Crumble Pie

FILLING

5 cups sliced apples
2 tablespoons quick tapioca
3/4 cup sugar
1/3 cup brown sugar
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Combine all ingredients. Set aside.

CRUST

2 cups sifted flour
1/4 teaspoon salt
2 tablespoons sugar
1/2 cup butter
2 slightly beaten egg yolks

Combine flour, salt, and sugar. Cut in butter with 2 knives or pastry blender until well blended. Add egg yolks. Mix well.

Press 2/3 of crumbs into a 10-inch pie plate. Pour apple filling into crust. Sprinkle leftover crust crumbs over filling for top crust.

Bake in a 425 degree oven for 10 minutes. Reduce heat to 325 degrees. Bake 45 to 50 minutes longer or until apples are soft and pie appears bubbly. Serve warm with whipped cream or cheese sauce.
